“Marc Forgione knows about as much as anyone when it comes to steak. But then again, cooking prime dry aged beef is not exactly shrouded in mystery. Given the proper equipment and service execution, charging Tribeca prices for premium cuts of beef isn't rocket science. But it is a science that American Cut gets right. You won't likely be blown away, but you won't be disappointed either.”
